Florida Seafood Stew

Got this recipe in a magazine about real estate titled,”House De-lites”. It is an amazing seafood dish.The ingredients are the following:

-1/4 cup olive oil, 1/2 cup wine               -1/2 cup bottled clam juice

-1/4 cup finely chopped onion               -2 tbsp.tomato paste dissolved in a cup of water

-1 tsp finely chopped garlic                    -1/2 lb each of 2 kinds of fine white fish

(bass,snapper,haddock,flounder)cut into 2 inch     -1/2 lb sliced sea scallops (optional)

-1 tsp Himalayan pink salt.

-1 freshly grated lemon peel

-1/2 tsp crumbled sage leaves.                     -2 bay leaves

-2 lb lobsters,cut up(optional).                  -2 tbs. finely chopped fresh parsley

Procedure: Heat olive oil in heavy 4-6 quart saucepan.Add onion,cook over medium heat.Stirring frequently for 8-10 minutes or until lightly colored.Add garlic & sage.Coat   stirring for 1 minute longer.Pour in wine,boil briskly over high heat.Stirring constantly until reduced to about 1/4 cup.Add tomato paste w/ water,clam juice bay leaves & salt.Reduce heat & simmer sauce partially covered for 10 minutes.Add lobster,cover & cook another 5 minutes.Add scallops,cook covered for 5 minutes (longer)Spoon fish & seafood into individual bowls.Ladle in sauce.Sprinkle w/ chopped parsley & grated lemon peel.Serves 6.Bon Appetit!……Note: I put some ingredients as optional & if you don’t have fresh sage you can use any fresh herbs,fortunately,I have a lil garden where I pick some pieces of Italian oregano & basil & still taste good.,as you can see on the picture I posted here.You can test drive this seafood recipe & appreciate to send me some of your feedbacks.Hurry & enjoy cooking in the pleasure of your own kitchen.Good luck!
