Curried Chicken with Boursin on Sliced Baguette

Hey everybody! I am fascinated with a lot of appetizers that we call hors d’ oeuvres…blame the French for their sexy names. Chicken salad spread is one of our all time favorites but I am kicking it up a notch by using boursin instead of just a mayonnaise and adding curry powder. I just love the marriage of this appetizer with the flavor of the freshly picked basil leaves and crunchiness of a French baguette. Yum, yum!

1 box of 5.2 oz boursin Garlic and Fine Herbs

1  and 1/2 pieces  of boneless chicken breast, boiled and meat picked, broth set aside for other use

1 tsp. ground black pepper

1 tsp. mayonnaise and 1 tbsp. cream cheese

1/4 of small yellow onion, minced

3 stalks of scallions,  sliced thinly

1/4 of 1 red bell pepper, cut into small pieces

a sprinkle of Himalayan salt(adjust as per your preference)

2 pineapple slices, chopped and juice lightly squeezed out, drained on a small collander

1  French baguette, cut diagonally into 1 and 1/2 inch slices

Some fresh, small basil leaves

2 tbsp.sweet pickle relish, 1/2-1 tbsp. curry powder

PROCEDURE:

Mix everything very well except the basil leaves. Refrigerate for 30 minutes, then spoon on each baguette slice, and place fresh basil leaves on top of the mixture. Serve immediately with your favorite wine. Put the left-over mixture into a mason jar and refrigerate.
