Idea came from Pure Wow , got no asparagus but have baby broccoli thus Eggs and Baby Broccoli for hurry up breakfast today, my friends.
a lb. or two of baby broccoli
6 pieces of miniature heirloom tomatoes, cut in half
1 tbsp. olive oil
2 tsp. chopped fresh dill
6 garlic cloves, peeled and smashed
salt and pepper to taste
a wide baking tray,
no stick cooking spray
1.Pre-heat the oven for 400 degrees F. Grease a baking sheet with no stick cooking spray.
2. Arrange the broccoli and halved heirloom tomatoes. Place smashed garlic on each of the brocçoli flowerette. Drizzle the olive oil over the vegetables, season with salt and pepper to taste.
3. Roast in the oven approximately 10 minutes, broccoli nearly tender.
4.Crack the eggs on the space in between the broccoli. Season top of each egg with salt and pepper.
5. Return to the oven and bake until the egg whites are set and yolks are jiggly, bake approximately 7-8 minutes and more if you want the eggs well done.
