My take on Shrimp Cauliflower Fried Rice

I am really craving for something from the sea, I remembered buying shrimp and searched recipe on line but decided to do our usual fried rice but used the riced cauliflower instead in keeping with low carbs diet. Although carrots is considered starchy, I used small portion and added a handful of frozen string beans too for color but since I already ate 1 whole egg, I decided to omit it, so let’s see the finished product which I ate at 6pm, my 2nd meal of the day.

This really taste delicious but didn’t finished everything but let’s proceed with the simple cooking.

My take on Shrimp Cauliflower Fried Rice

Ingredients:

3 Tbsp. extra Virgin olive oil

1 tsp. soy sauce

1/2 lb. shrimp ( heads off, peeled, deveined)

1/2cup chopped carrots

1/4 cup frozen string beans (thawed, drained and dried)

1 tsp. crushed red pepper flakes

8.5 oz riced cauliflower (microwaved for 1 min, drained on a colander)

4 cloves garlic (minced)

Sprinkle of Celtic salt and freshly ground black pepper.

3 pcs. shallots ( sliced):

1 thumb-sized fresh ginger (peeled, minced)

Procedure:

1. Fry shrimp in 3 tablespoon of extra Virgin oil until pink like a minute or two on each side, gather with a tong and leave the oil in pan and set aside the shrimp on a plate.

2. On the same pan with the remaining oil, sautee the garlic for a minute then ginger and shallots until transluscent, add the crushed red pepper flakes, stir until fragrant.

3. Add the carrots and the string beans until softened, add the riced cauliflower, stirring well into the vegetables until the water evaporated, add a teaspoon of soy sauce, continue stirring until well combined, add the shrimps, stirring well, taste if it’s to your preference, then turn off the stove and sprinkle Celtic salt and freshly ground pepper.

So delicious but I was unable to walk before or after eating today so my sugars are the following: 165mg/dL 30 minutes after, 181 mg/dL 60 minutes after and 173mg/dL 90 minutes after, then I will check again at 9 pm before I sleep. Next time I visit my doctor I will ask to check not only my HbA1c and fasting glucose level but also C-Peptide level and fasting insulin level. I am not taking any medicines now while i am on low carbs diet, still a work in progress but very hopeful that I am improving my health. It’s about time that we mind what we put in our mouth as so many junk and garbage foods out there which are sabotaging our health and general well being.
