Jasmine & Red Quinoa Rice Blend

Hi, guys, a lot of my co-workers requested a white rice and quinoa blend, just happy to research and practice many times to test-proof this recipe. Let’s go either to Trader Joe’s or Whole Food Market. It’s $5.99 per pound at Whole Foods and only $3.99 per pound at Trader Joe’s. They are both organic by the way. So it’s your choice which one you want to buy. Let’s start preparing it.

INGREDIENTS:

2 cups Jasmine rice ( washed, rinsed and drained )

1 cup red Quinoa (rinsed well under running water in a fine mesh colander)

6 cups water

PROCEDURE:

1. After draining well the rice and quinoa, place in a wide, stainless pot on top of the stove on high heat, add 6 cups of water and stir well then cover.

2. Once, it simmers, lower the heat and boil for 20 minutes, after 20 minutes turn off the stove & remove the pot from the stove and let it sit on top of the dining table covered for few minutes, till the quinoa pops with the steam.

3. Uncover and check how it is perfectly cooked and ready to serve with your chicken or fish.
