Home-made Salted Eggs

Hey there, I am tired of buying commercially prepared salted eggs which tastes only salty and missing the almost oily yellow yolk stuff in the middle. I decided to make my own salted eggs fondly called, ” Maalat na Itlog ” Let’s peak on my brining glass with only 17 pieces of eggs. Back home in the Phils.,they used huge duck eggs and cover them in mud and salt.

Let’s gather up our ingredients which probably already in your kitchen cupboard.

INGREDIENTS:

4 cups water

2 cups salt

3-4 pieces of bayleaves

1 Tbsp. whole black peppercorns

1 cinnamon stick

1/2 tsp. turmeric powder

1 piece of star anise

few slices of ginger

PROCEDURE:

1. Wash the eggs carefully and drain them in a colander.

2. In a pot stir and boil the water and salt until they dissolve.

3. Add all the remaining ingredients except the eggs for 20 minutes. Cool the mixture inside the refrigerator.

4. Wash and dry a very a deep clear glass container with cover, other people use plastic container. Take the cold mixture and let it rest on the dining table while preparing your vessel.

5. Carefully pour the brine into the glass container and carefully layer the eggs. You may add a plastic with water tied on top to keep the eggs submerge into the brining mixture as the eggs tend to float on top. Label and date the outside of the glass.

6. After the brining period is achieved, open the glass jar and carefully take out all of the eggs and wash them.

7. Put all the eggs in a pot and cover them with water, boil and simmer in a slow heat for an hour. Remove the pot from the stove and immediately take out all of the eggs and plunge in cold water. Break one egg in half and see the good results if the yolk in the middle of the egg turns bright yellowish and glistening and moisten with the liquidity oil.
